Introduction

When Sowing Seeds of Love Everywhere (SSOLE) decided to write a cookbook, we wanted to include recipes that were an expression of love from each of us, and gave you the ability to create delicious, whole food meals. We know from years of cooking wonderful meals for our families and friends, that eating a primarily vegetarian or vegan diet can include some of the most flavorful ingredients and combinations possible. The stereotype of bland, tasteless lentil loafs and brown rice as vegetarian or vegan staples certainly becomes a myth when you encounter recipes like the ones included in this cookbook.

Over the last 15 years, the variety and quality of ingredients available in most grocery stores has improved dramatically. We can now find handcrafted artisan cheeses and chutneys, ethnic ingredients as well as fresh, organic vegetables. Even five years ago, it was a challenge to find these fresh and exotic ingredients at our local stores. With all these new choices available, the ability to create fast, nutritious whole food meals on a daily basis has expanded exponentially.

Many of the recipes chosen rely on a few simple ingredients used in a variety of ways. Once you are familiar with the basic ingredients, you should have fun experimenting with your own culinary creations, and can create a multitude of quick, easy meals to add to your repertoire. Other recipes included are more complicated and involved. These recipes are true labors of love, and may require a full day of preparation and cooking. Every meal is an opportunity to nourish your bodies and family, and we believe it is also a wholesome expression of your love.

Several friends have expressed an interest in finding healthier vegan or vegetarian variations on classic dishes, such as macaroni and cheese or beef stew. We found it easiest to recreate these flavors by using some of the meat and cheese substitutes found in our markets today. Most of these recipes can also be made with tofu, tempeh, or seitan.

We believe that choosing organic, sustainable foods is an important part of our stewardship of the planet. Eating in a way that nourishes you also supports our precious ecosystems. With this in mind, we stress using organic ingredients produced by local farms whenever possible.

All of the recipes in Cooking with SSOLE come directly from the hearts and kitchens of our staff, friends, and volunteers. We hope that you enjoy preparing and eating them as much as we have. Enjoy!
